This adage shows which role Turkish cuisine plays. Beside French and Chinese cuisine the Turkish one belongs to the three outstanding cuisines worldwide.
 The food is tasty, multifaceted and a mix between rural tradition and elegant palace cuisine in Istanbul. Not to forget the delicious desserts and sweet kickshaws from the Orient.
 In general sheep, lamp, poultry as well as beef, but no pork meet is used. Plenty of vegetables are on their menu which is changing in season. Some meals are served with yogurt, some with olive oil.
 
 On the basis of the following options of Turkish cuisine you can create a tasty lunch or diner. This cuisine offers more than “Döner” from next door

 

 - Soups

A meal always starts with a soup which is served hot. 

  • Trahana corbasi (tomato, yoghurt)

 - Rice dishes

There are many species of „Pilavs“ – rice, bulgur and wheat.

 - Pastry and noodle dishes

This contains Pide dishes (flatbread with filling) and Börek dishes (pasties made with strudle or filo pastry) which are filled with sheep cheese, vegetables or minced meat.

 - Fruits

Depending on the season Turkey offers sweet and juicy fruits like melons, peaches, grapes, figs, apricots

              

 

 - Beverages

  • Çay (tea almost will get drunk in small glasses with sugar)

  • Kahve (cafe - mocca)

  • Ada çay (sage tea)

  • Salep (hot beverage made of salep roots)

  • Vişne suyu (cherry juice)

  • Ayran (beverages made of yoghurt)

  • Turkish beer f.e. Efes

  • Rakı (anise schnapps, famous alcoholic drink, often thinned with water)

 - Yoghurt

Yoghurt is a westward component of Turkish cuisine. There are 2 different – semi liquid yoghurt and the compact “Süzme” yoghurt. You can use it for many different dishes and for the creation of Ayran. Often it is self made.
